As the harvest season draws to a close in the American Redoubt,  one of the last items to get put up in the pantry for the winter is apples!  We had driven by the same apple trees a few different times and then decided to ask the owner if they were going to use them.  They said we could have all we wanted!  Glad those apples are not going to waste and it never hurts to ask.   We will be sure to thank the owner by sharing a few jars of final product.

We picked four different varieties of apples, gave them a good wash, then peeled and sliced them using this apple peeling gadget.  Most of the apples were cooked down in a large roaster for apple sauce and the rest, we made apple pie filling (recipe).  It turned out really good!  To thicken the pie filling, we used Ultra Gel (thickener for canning).   It was a bit of work getting the apples all processed but well worth it!  We look forward to homemade apple pie this winter!
